I agree with everything you're saying here. It does feel like the start of the decline towards the end. The fact is: Sutter knows TV, and knows how it works. Very few shows can keep years of longevity without becoming stale and "jumping the shark" and he knows it as well as anyone. For most great shows, 7 seasons is pretty much tops, sometimes 8 or 9 but they've lost most of their following by then. I don't think it's a money thing with Kurt, but more a whack to his pride if the show goes stale and loses audience. I don't think he'll let it happen.
As far as the rest, I do see both Jax and Clay headed for some dumb decisions. I think they'll both get desperate in their own pursuits and likely butt heads again.
Tara is both a good and a bad thing for Jax in my opinion. The fact that she wants to steer him straight is good on paper, however in reality I think the more he tries to fly straight the more problems he'll have. The life he has chosen is very binary: you're either all in, or you're out. There is no middle ground and as we see him try to walk it we'll see a lot of problems come up. You can't just up and walk away from something when it's the only thing you have, and the only thing you've ever known.
Tara and Gemma will likely clash again as well. We all know her thoughts on John Teller in General, and the direction he was taking. If she finds out Tara is being influenced by these letters, she will turn on her and force her hand in some way. Gemma has both the club as her best interest and her grandchildren, if there is a clash she will come out swinging.
I don't know ... who Clay's hitting, except for you. I'm sure he's hitting you, cause you're his wife and all.
